Seriously, you haven't been looking too hard. I see manual ti's come across the radar quite frequently in Arizona, it seems to be one of the states where they seem to be more plentiful.

This Alaskan Blue, 5 speed, 126,000 miles for $3,100 has been for sale since 12/2009 in Tucson is worth a look at.

If it were closer I might have picked that bad boy up!
