When I think of performance, I think of a light rim and sticky rubber.
For rubber, something like RS3's, ZII's, Rivals or similar seem to be the most popular choices. The less aggressive V12's or Conti DW's don't give as much ultimate grip but are better for daily driving duties. 225/50/16 works well but I believe the E36 can fit 245/40/17 underneath with the proper offsets. Just use a tire diameter calculator to figure out the proper width and profile you want.
I think 16's or 17's on the E36 is the best wheel diameter. Light brands are Apex, D Force, BBS, Kosei, TRMotorsports and Racing Dynamics. Usually, don't get an ET higher than 45 or else your wheel may rub the strut, lower offsets may be needed if you have coilovers. I am looking at a 16x7 et35 wheel that only weighs 15 lbs. Pair that with a grippy 225/50/16 tire and you'll be good to go.
