Default door panel question

Will door panels from a 98 328 (I think) convertible fit a 93 325is coupe?

I'd look up the part number first. 51418171772
Then cross reference it

The front door cards per se are completely the same, it's just the grab handles and the colors that were different. Covertibles had a lot wider range of colors and styles available than on the Coupe range. A lot of people here in Germany put Convertible front door cards on tbeir Coupe, mainly because of the different handle design.
The rears won't fit into a Coupe though because of the extra speakers that the Convertibles had in the rear cards and because of their different designs (Convertible door cards are wider to fit the electric roof in there).

what about the side airbags in the door that the 98 has? does that matter when installing the panel on a 93?

Well in my case, I removed the airbags and just installed them without them. They fit 1:1, it's just that it looks like you have side airbags but obviously you don't.
